Large Stuffed Zucchini Boats

This unique one dish meal is a tasty and healthy addition to any menu.

Ingredients

  • 1 1/3 oz Italian Seasoning from Little Wingnut Farm
  • 1 lb of ground turkey or chicken
  • 2 carrots grated, from Angels Farm
  • 2 stalks of celery thinly sliced, from Angels Farm
  • 1 sweet onion finely chopped from Glencairn Farm
  • 2 tomatoes pureed from Angels Farm
  • 1 medium to large zucchini from Angels Farm
  • 1 cup shredded Pepper Jack Cheese from Valley Oak Dairy
  • 2 tbsp of olive oil
  • Pinch of sea salt

Preparation

  • Heat oven to 375 degrees.
  • Cut zucchini lengthwise and scoop the middle out of it.  Set aside to cook with meat.
  • Place all ingredients, excluding the cheese, into a large skillet with olive oil.  Cook until meat is brown and veggies are tender.
  • Add Italian Seasoning and cook for additional 5 minutes.  Add sea salt to taste.
  • Drizzle both sides of zucchini with olive oil, place meat mixture in middle of zucchini, top with cheese and bake for 40 minutes at 375 degrees.
  • Serve and enjoy!
